it’s made for two but you don’t have to share. oh, the ingredient list couldn’t be more simple and there’s a good chance you have everything on hand!
pumpkin puree is currently plentiful at grocery stores from what i have observed, so buy some while you can.
the base is made with oat flour and almond flour and it has pumpkin flavor from both pumpkin puree and pumpkin spice.
also, my Giant Vegan and Gluten Free Pumpkin Chocolate Chip Cookie is DELICIOUS to eat simply as cookie dough!
simply omit the baking powder and you have easy, seasonal, wholesome and extremely scrumptious cookie dough to eat.
however, y’all know that i love a good baked cookie and Giant Vegan and Gluten Free Pumpkin Chocolate Chip Cookie is no exception.
the outside of the cookie is firm and the inside is fudgy, dense and gooey. the key is to achieve the perfect inside texture is to make the cookie THICK so that’s it’s just under-baked.

gluten free oat flour
dairy free milk
runny almond butter
dairy free chocolate chips
vegan cream cheese if wanted for frosting
that’s it y’all, sounds simple enough, right? to make the cookie even more decadent, you could add vanilla frosting. all i had on hand was plain cream cheese.

Giant Vegan and Gluten Free Pumpkin Chocolate Chip CookieCourse: Cookies, Desserts
1/2 cup oat flour (used gluten free to keep gf)
1/2 cup almond flour
1/8 cup coconut sugar
1/2 tsp baking powder
1/2 tsp pumpkin spice (can add more if wanted)
1/4 cup runny almond butter
1/4 cup pumpkin puree
1/8 cup dairy free milk
1 tsp vanilla extract
1/4 cup or more dairy free chocolate chips
- vegan cream cheese or frosting if wanted
- preheat the oven to 350 degrees.
- add the dry ingredients to a large bowl and then mix in the wet ones until a thick dough forms.
- then fold in the chocolate chips and form the dough into a giant, thick cookie.
- bake at 350 degrees for 16 minutes and enjoy!
- cool down completely and then add frosting or cream cheese.
