happy midweek everyone! yay for a new summer recipe! Nourishing Vegan Fruit Cobbler defines summer desserts. it’s even healthy enough to eat for breakfast as it’s packed with nutrients and fiber. the topping is a deliciously simple mixture of almond flour, oats and more. everyone will love this easy cobbler!
i get my peaches out in florida from Trader Joe’s y’all and they’re really goooood.
ok, for this recipe, i used organic jarred peach halves and i highly recommend over fresh because they cook down more.

you can totally use fresh if you want, but they won’t be quite as tender. as far as the other yummy fruits, i went with bananas and strawberries.
this trio of fruits is simply divine, like it’s on another level. the fruits are so sweet by themselves, so i didn’t even add sugar to the mixture.
the topping has 1/4 cup of maple syrup but that’s really not a lot at all. like i said, this recipe is healthy enough for breakfast!!

cobblers are amazing and one of the most versatile desserts. you can use any fruit that you want!
in fact, don’t think twice about replacing any of the ones i used with another kind. blueberries, blackberries and raspberries would be amazing.
apart from those, i can’t say i’ve tried cobblers with other fruits, but it would be oh so fun to experiment!
this cobbler cooks within 28 minutes and took me only about 7 minutes to prepare. it’s a no fuss recipe and tastes so much more indulgent than it is.

here’s everything that you need to make Nourishing Vegan Fruit Cobbler:
- bananas
- strawberries
- peaches
- organic corn starch
- vanilla extract
- cinnamon
- gluten free all purpose flour
- almond flour
- maple syrup
- almond butter
- water
so flippin’ easy right?! you can also use tapioca flour or arrowroot flour instead of corn starch. any of the aforementioned flours will work!
the reason you need one of these ingredients is to absorb any extra liquid to avoid a runny cobbler, trust me, it makes a difference.

how should you store this vegan cobbler!?
the cobbler has to be stored in the fridge in an airtight container and it should be good for about three days!
personally, i prefer the cobbler slightly warm but it’s great at room temperature too!
some vanilla ice cream on top would be the perfect addition. you could even add a dollop of plain cream cheese. i didn’t have either so i added coconut cream.

Nourishing Vegan Fruit Cobbler

1 lb jarred peach halves rinsed and drainedย
1 lb strawberriesย cut into halves or quarters
3 medium sized bananas sliced
1 tbsp organic corn starchย
1/2 tbsp vanilla extract
1 tsp cinnamonย
- topping
1/2 cup gluten free all purpose flour
1 cup almond flour
1/4 cup maple syrup
1/4 cup runny almond butter
1/4 cup waterย
1/4 cup oats
Directions
- preheat the oven to 350 degrees.
- add the fruit, corn starch, vanilla extract, and cinnamon to large mixing bowl and mix well.
- add to an 8 x 11 baking dish.
- mix the topping ingredients in a bowl until a thick dough forms. place on top of the fruit and bake at 350 degrees for 28 minutes.
- store in the fridge in an airtight container and enjoy!
