Vegan Spanakopita Inspired Smashed Potatoes

Ingredients

  • 2 lbs small yellow potatoes
    olive oil (for boiling and coating)
    salt (to taste)
    10 oz fresh spinach, chopped
    2 tablespoons olive oil (for sautéing)
    1 teaspoon onion powder
    1 teaspoon garlic powder
    8 ounces vegan cream cheese
    1/2 cup crumbled vegan feta

Directions

  • preheat the oven:
    preheat your oven to 400°f (200°c).
  • prepare the potatoes:
    -wash the small yellow potatoes thoroughly.
    -place them in a large pot and cover with water. add a pinch of salt.
    -boil the potatoes until they are fork-tender, approximately 15 minutes.
    -drain the potatoes and let them cool slightly.
  • smash the potatoes:
    – coat in extra virgin olive oil. place the boiled potatoes on a baking sheet lined with parchment paper.
    -using a mug or sturdy cup, gently smash each potato until it’s flattened but still holds together.
  • bake the potatoes:
    -bake the smashed potatoes in the preheated oven for 22-25 minutes, until they start to crisp up.
    -carefully flip each potato and bake for an additional 7-10 minutes, until golden and crispy.
  • prepare the spinach topping:
    -while the potatoes are baking, heat 2 tablespoons of olive oil in a pan over medium heat.
    -add the chopped spinach to the pan and sauté until wilted.
    -season the spinach with onion powder, garlic powder, and salt to taste.
    -turn off the heat and add the vegan cream cheese and crumbled vegan feta to the pan.
    -mix until the vegan cream cheese is melted and well combined with the spinach and feta.
  • assemble and serve:
    -once the smashed potatoes are done baking, remove them from the oven.
    -spoon the spinach and vegan feta mixture over the tops of the smashed potatoes.
    -serve the vegan spanakopita inspired smashed potatoes hot and enjoy!
