overall, Vegan Make You Feel Good Stew is made within 45 minutes and it’s something that the whole family can enjoy.
while stew may be more popular for colder weather, this one is perfect all year round in my opinion.
Vegan Make You Feel Good Stew would also be a great recipe to meal prep for a few days!
the stew is best served with rice or quinoa, but you can totally eat it on it’s own! i just love something warming and hearty, so rice is usually my side of choice.

this is a stew that is hearty, earthy and super tasty. i used carrots, an assortment of small potatoes and broccoli for the main veggies, but feel free to use whatever you have on hand.
Vegan Make You Feel Good Stew is very versatile and you can swap those veggies with anything from cauliflower to bell peppers, zucchini and more.
also, i did add some roasted artichoke to this soup because it gives it a light and fabulous smoky flavor.
i bought jarred organic roasted artichokes that were pre chopped from the store that were marinating in olive oil.
if you can’t find pre-diced, just get the marinated chunks and cut them into small pieces.
additionally, if you’re not a fan of artichoke, then feel free to omit that or replace with something similar in texture like mashed butter beans or something.
the spices used in Vegan Make You Feel Good Stew are paprika, curry powder and chili powder.
dijon mustard adds a nice slightly tangy hint and be sure to season well with sea salt and pepper.

Vegan Make You Feel Good Stew

Ingredients
12 ounces broccoli florets
2 cups sliced carrots
2 cups sliced potatoes
3/4 cup marinated diced artichoke
2 and 1/2 cups vegetable broth
2 cups coconut milk
1 tbsp minced garlic
1/2 cup diced onion
avocado or olive oil for sauteeing
1 tbsp curry powder
1 tsp chili powder
1/2 tsp paprika
2 tbsp nutritional yeast
1 tbsp dijon mustard
Directions
- start out by sautรฉing the onions and garlic in olive oil on medium high heat for a couple of minutes.
- then, add the carrots, potatoes and broccoli and saute another few minutes.
- then, add the remaining ingredients. stir the stew and once it comes to a boil, turn the heat down to medium. cook for about 30-35 minutes or until it thickens and the veggies are very tender.
- serve with rice, quinoa or whatever you enjoy!
