Vegan Green Goodness Pasta is exactly what you should make for dinner tonight! it’s absolutely loaded with nutrient-dense foods and will keep you full for hours.

brussels sprouts, spinach and a deliciously hearty green goodness sauce make this meal 10/10 perfect for lunch or dinner!

prep this ahead of time for your meals or make Vegan Green Goodness Pasta for the entire family!

you may even get the kids to eat brussels sprouts AND spinach since this dish is so tasty.

the sauce really makes Vegan Green Goodness Pasta outstanding as it’s packed with flavor.

from fresh basil and spinach to garlic, pumpkin seeds and hemp hearts, there’s nothing not to love.

you can use any kind of pasta that you would like! for a little extra protein, maybe opt for some chickpea pasta.

i went with classic semolina flour because that’s what we had on hand but any will work.

in fact, you don’t even need to use pasta! you could also try quinoa, rice, cauliflower rice or lentils to switch things up.

additionally, if you don’t want to use brussels sprouts or spinach, you can always make some swaps!

i would recommend using zucchini and kale if those are options you enjoy! nonethless, any veggies and greens will work.

Vegan Green Goodness Pasta

Ingredients

  • green goodness sauce
  • 2 large handfuls of fresh spinach

  • 2 handfuls fresh basil

  • 1 tbsp nutritional yeast

  • 1 tbsp minced garlic

  • 1/3 cup avocado oil or EVOO

  • 1/3 cup vegetable broth

  • 1/3 cup hemp hearts

  • 1/3 cup pumpkin seeds

  • 1/2 cup bruschetta artichokes (found at whole foods) or roasted is fine!

  • sea salt and pepper to taste

  • veggies and spinach
  • few tbsp avocado oil or evoo

  • few large handfuls of spinach

  • 1 bag very thinly sliced or shredded brussels sprouts

  • 1 tsp onion powder

  • sea salt to taste

  • 1 lb pasta of your choosing

Directions

  • add all green goodness sauce ingredients to a food processor and blend until a thick consistency forms.
  • saute the spinach and brussels sprouts with the onion powder on medium heat in avocado oil for about 8-10 minutes.
  • then, combine with the sauce and pasta and mix well! top with your faves and enjoy!
