2 cups small cubed watermelon
2 medium cubed avocados
3/4 cup vegan feta
1/3 cup very finely chopped red onion
1/3 cup pomegranate arils
1/4 cup chopped fresh mint
3 tablespoons extra virgin olive oil
juice of 1/2 lime
1 tablespoon rice vinegar
1/2 teaspoon garlic powder
1/2 teaspoon sea salt
Directions
- prepare the ingredients:
-cube the watermelon into small pieces.
-cube the avocados into medium pieces.
-finely chop the red onion.
-juice half a lime. - ix the base:
-in a large mixing bowl, combine the cubed watermelon, cubed avocados, vegan feta, chopped red onion, mint, and pomegranate arils. - make the dressing:
-in a small bowl, whisk together the extra virgin olive oil, lime juice, rice vinegar, garlic powder, and sea salt until well combined. - combine and toss:
-pour the dressing over the watermelon mixture.
-gently toss all the ingredients together until everything is evenly coated with the dressing. - serve:
-transfer the salsa to a serving bowl.
-serve immediately or chill in the refrigerator right before serving!
