prepare the ingredients: -cube the watermelon into small pieces. -cube the avocados into medium pieces. -finely chop the red onion. -juice half a lime.
ix the base: -in a large mixing bowl, combine the cubed watermelon, cubed avocados, vegan feta, chopped red onion, mint, and pomegranate arils.
make the dressing: -in a small bowl, whisk together the extra virgin olive oil, lime juice, rice vinegar, garlic powder, and sea salt until well combined.
combine and toss: -pour the dressing over the watermelon mixture. -gently toss all the ingredients together until everything is evenly coated with the dressing.
