if you’re looking for a delicious and satisfying plant-based dish, look no further than this sticky and crispy baked cauliflower.
this recipe transforms humble cauliflower florets into a flavorful, crispy delight that’s perfect for dinner.
let’s dive into what makes this dish so delicious, how to prepare it, and some tips for making it your new favorite meal.

taste and texture
this baked cauliflower is a perfect blend of crispy and sticky.
the cauliflower florets are baked to a golden perfection, giving them a satisfying crunch.
once coated with the sweet and savory sauce, the florets become wonderfully sticky, making each bite perfect.
the sauce itself is a mix of umami from the liquid aminos, sweetness from coconut sugar and maple syrup, and a hint of spice from the optional sriracha.
the addition of freshly grated ginger adds depth and complexity to the flavor profile.
how to make it
making this sticky and crispy baked cauliflower is straightforward and rewarding. here’s a quick rundown of the process:
- prepare the cauliflower:
- preheat your oven to 400°f (200°c).
- cut 2 heads of cauliflower into florets and toss them in a mixture of avocado oil, arrowroot starch, garlic powder, and onion powder.
- spread the coated florets on a baking sheet and bake for 25 minutes, flipping halfway through to ensure even crispiness.
- make the sauce:
- while the cauliflower is baking, whisk together the sauce ingredients: liquid aminos, coconut sugar, maple syrup or agave, arrowroot, vegetable broth, minced garlic, rice vinegar, freshly grated ginger, sesame oil, and optional chili paste or sriracha.
- cook the sauce over medium heat, stirring constantly until it thickens.
- combine and serve:
- once the cauliflower is baked to a golden brown, toss it in the thickened sauce until well coated.
- serve immediately for the best texture and flavor.

a great dinner idea
this sticky and crispy baked cauliflower makes for a fantastic dinner when paired with a good vegan protein. consider serving it alongside:
- quinoa: a protein-packed grain that complements the flavors well.
- tofu or tempeh: add an extra layer of protein by including some marinated and grilled tofu or tempeh.
- edamame: steamed edamame can provide additional protein and a contrasting texture.
what to serve it with
for a balanced and colorful plate, serve this cauliflower with:
- steamed or sautéed greens: such as spinach, kale, or bok choy.
- brown rice or jasmine rice: a perfect base to soak up the delicious sauce.
- a fresh salad: a simple cucumber and carrot salad with a light vinaigrette can add a refreshing contrast.
storage
leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
to reheat, spread the cauliflower on a baking sheet and warm in the oven at 350°f (175°c) until heated through, about 10-15 minutes. this will help retain some of the crispiness.
substitutions
if you need to make some substitutions, here are a few ideas:
- arrowroot starch: can be replaced with cornstarch or potato starch.
- liquid aminos: soy sauce or tamari are great alternatives.
- coconut sugar: brown sugar or regular sugar can be used instead.
- maple syrup: agave can work as a replacement.

this sticky and crispy baked cauliflower is not only a delicious way to enjoy vegetables, but it’s also versatile and easy to make.
whether you’re serving it as the main dish or as part of a larger meal, it’s sure to impress.
