  1. in a food processor, combine 1 cup of rinsed and drained chickpeas, 1/2 cup vanilla protein powder, 1/2 cup oat flour, 1/3 cup peanut butter, 3 tbsp maple syrup, 1 tsp vanilla extract, 2 tbsp dairy free milk and 1/4 tsp sea salt. process until smooth and well combined.
  2. press the mixture evenly into a lined 8×8 inch square baking dish or large bread loaf pan.
  3. steam or boil 1 medium sweet potato, peeled and cubed, until tender. drain and let cool slightly.
  4. in a food processor, blend the sweet potato with 1/2 cup melted vegan chocolate until smooth and creamy.
  5. spread the sweet potato frosting evenly over the bars in the baking dish.
  6. refrigerate for at least 2 hours or until firm. once set, cut into bars and enjoy!

Ingredients

  • 1 cup canned chickpeas, rinsed and drained
    1/2 cup vanilla protein powder
    1/2 cup oat flour
    1/3 cup peanut butter
    4 tbsp maple syrup
    1 tsp vanilla extract
    2 tbsp (may need to add more) dairy free milk
    1/4 tsp sea salt

    for the frosting:
    1 medium sweet potato, peeled and cubed
    1/2 cup melted vegan chocolate

Directions

  • prepare the bars:
    in a food processor, combine chickpeas, vanilla protein powder, oat flour, peanut butter, maple syrup, vanilla extract, dairy free milk and sea salt. process until the mixture is smooth and well combined.
  • press the mixture evenly into a lined 8×8 inch baking dish or large bread loaf pan.

  • prepare the frosting:
    steam or boil the sweet potato cubes until they are tender, about 10-15 minutes. drain and let cool slightly.
  • in a food processor, blend the sweet potato with the melted vegan chocolate until smooth and creamy.

  • assemble:
    spread the sweet potato frosting evenly over the bars in the baking dish. freeze for at least 2 hours or until firm.
  • serve:
    once set, cut into bars and enjoy!
  • store the bars in an airtight container in the refrigerator for up to one week but we recommend storing in the freezer and thawing a bit before eating.

  2. Really good and decadent. My chocolate chips were dark chocolate so I had to add a little maple syrup, pinch of sea salt , and a little vanilla extract to the sweet potato frosting to give it a little more flavor/sweetness. Great recipe otherwise per usual☺️
