happy weekend friends! now this is something that i haven’t done before, Epic Healthier Vegan Dirt Pudding! oh my goodness, for being made with healthy ingredients, i am oh so thrilled with the taste, texture and everything else about this recipe.
you’re going to LOVE Epic Healthier Vegan Dirt Pudding! your kids will adore this recipe and not have a clue that’s it’s secretly healthier.
you don’t have to be a kid to enjoy this though, i am plenty content sitting in my pajamas on this rainy day scarfing this down.

the base of the dirt pudding is made with vegan cream cheese, vegan yogurt, maple syrup, vanilla extract, and healthy store bought gf cookies.
the topping is made of pulsed homemade gluten free cookies and they’re SO GOOD.
you can use homemade cookies in the actual pudding itself too, i just took a little shortcut with store-bought.
the siete Mexican chocolate cookies are AMAZING and that’s what i used for the pudding.


my topping is homemade and packed with nutrients by the way.
you’re going to need almond flour, coconut flour, sunbutter or any nut/seed butter, maple syrup, flax eggs, vanilla extract and cocoa powder.
they bake in the oven until they’e pretty firm and then we pulse them in the food processor.
you top the pudding and then you can add some dates aka nature’s candy to the top OR gummy worms! it’s honestly such a fun recipe and really easy to make.
the majority of the recipe is done in the food processor, so it’s an easier clean up too.

as far as storing the pudding, you can store it in an airtight container in the fridge but I do recommend eating it the day of.
Epic Healthier Vegan Dirt Pudding will totally taste amazing the next day but it’s perfect when you have the firmer cookie topping.
you can grab a spoon and dig in, or you can dip some vegan cookies or graham crackers into the pudding, yum!
also, if you don’t want to make this recipe one large pudding, feel free to use individual cups! the recipe is versatile and either works just fine.

Epic Healthier Vegan Dirt Pudding

Ingredients
- pudding
8 ounces vegan cream cheese (used kite hill)
16 ounces plain dairy free yogurt (make sure it’s creamy, i used kite hill)
1/3 cup maple syrup
1 tsp vanilla extract
1 cup healthy store bought chocolate cookies
- “dirt” topping
1/4 cup almond flour
1/4 cup coconut flour
1/4 cup cocoa powder
2 flax eggs (2 tbsp flax meal + 6 tbsp water)
1/3 cup sunbutter or any nut/seed butter
1 tsp vanilla extract
1/3 cup maple syrup
- dates for topping
Directions
- preheat the oven to 350 degrees.
- mix the dirt topping ingredients together and then mold the dough into small cookies about 1/3-1/2 inch thick. i was able to make about 9.
- bake at 350 degrees for 28 minutes. we want them to be on the harder side.
- for the pudding, add all ingredients to a food processor and blend until a thick pudding consistency forms.
- add to an 8 x 11 baking tray and place in the fridge.
- once the cookies cool down, add them to the food processor and pulse until a grainy consistency.
- place on top of the pudding, add some dates or gummy worms and enjoy!
