Five Minute Peanut Butter Cookie Dough Date Bites

Ingredients

  • 10 medjool dates, pitted and flattened
    1/2 cup runny peanut butter
    1 tbsp maple syrup
    1 tbsp coconut flour
    1 tsp vanilla extract
    1/4 cup peanuts
    1/4 cup mini chocolate chips (or to taste)
    melted chocolate (optional, for topping)

Directions

  • in a medium bowl, mix together the peanut butter, maple syrup, coconut flour, and vanilla extract until well combined.
  • fold in the peanuts and mini chocolate chips.
  • roll the peanut butter cookie dough into small balls and place one on top of each flattened date. if desired, drizzle the dates with melted chocolate.

  • freeze the stuffed dates for 20 minutes to set. store in the fridge and enjoy!
