Vegan Superfood “Meatballs” and Spicy Curry Sauce

Vegan Superfood “Meatballs” and Spicy Curry Sauce are what you NEED to make for dinner this week!

this meal is warm, cozy, incredibly healthy and totally delicious.

it is the perfect midweek pick me up recipe. if you’re making this for your kids, then just choose a non-spicy curry paste and omit the buffalo sauce.

besides the delectable sauce, the superfood meatballs are exceptional and have the most stellar nutrient-dense profile.

they’re made with all kinds of goodies like pumpkin seeds, tempeh, lentils, hemp seeds, flax meal and more.

Vegan Superfood “Meatballs” and Spicy Curry Sauce will keep you nice and full for hours if you serve it with some wild rice, quinoa or pasta.

the sauce is good enough to eat by the spoonful and has a phenomenal depth of flavor.

you’re going to need simple ingredients like coconut milk, red curry paste, buffalo sauce, marinara, veggie broth and more.

while the sauce is easily whipped up in a pan, the superfood “meatballs” are baked.

then, you can add the “meatballs” to the pot with the sauce and cook them for just a few minutes.

this will ensure they’re warmed through and ready to serve! just store them in an airtight container and enjoy throughout the week!

the sauce itself only takes about 8 minutes to cook and thicken up! you just have to keep an eye on it and stir periodically.
