Vegan Superfood “Meatballs” and Spicy Curry SauceCourse: Lunch u0026amp; Dinner, Main Dishes
- Vegan Superfood “Meatballs”
6 ounces gluten free tempeh
1/2 cup raw pumpkin seeds
1/3 cup hemp hearts
1 and 1/3 cups cooked lentils
2 tbsp buffalo sauce
1/3 cup chickpea flour
1/3 cup flax meal
1 tbsp minced garlic
1 tsp onion powder
3 tbsp sundried tomatoes (oil too)
1 tbsp avocado oil
sea salt and pepper to taste
- Spicy Curry Sauce
1/4 cup buffalo sauce
1/3 cup runny peanut butter
1/2 cup marinara sauce
1/2 cup full fat coconut milk
1 tbsp red curry paste
3/4 cup vegetable broth
1 tbsp minced garlic
- pre heat the oven to 375 degrees.
- add all the superfood “meatball” ingredients to a food processor and blend until everything is very well combined and a paste-like grainy texture forms.
- use a medium size ice cream scoop to evenly distribute the mixture and roll into a ball.
- bake at 375 degrees for 15 minutes.
- add all sauce ingredients to a large pan and once it comes to a boil, cook for 8 minutes roughly on medium-high heat. stir periodically.
- add the baked “meatballs” to the sauce, warm through for a few minutes, serve with a grain and enjoy!
