sometimes, that includes raisins and other times, walnuts. there aren’t any walnuts in this recipe but you’re more than welcome to add some!

here’s a pro tip! i know i’ve said this before but just in case anyone missed it, do NOT grate your carrots by hand, it’s such a waste of time and energy lol.
throw 3 large carrots cut into smaller pieces in the food processor and blend away on high.
you will get the perfect “grated” texture every single time.
3 carrots should definitely give you about a cup, which is what you need for this recipe.

Vegan and Gluten Free Carrot Cake Cream PiesCourse: Cookies, DessertsDifficulty: Easy
yields 4-6 cookies depending on how large you make them
1 cup almond flour
1 cup gluten free all purpose flour
2 tbsp flax meal
1/4 cup coconut sugar
1 tsp baking powder
1 tsp cinnamon
2 tsp vanilla extract
1 cup grated carrot
1/4 cup agave
2 tbsp runny almond butter
1/4 cup almond milk
1/2 cup raisins
- frosting-in the food processor, i blended 1/2 cup vegan cream cheese and 1/2 cup simple mills frosting)
- preheat the oven to 350 degrees.
- mix the wet and dry ingredients until a thick dough forms and then fold in the carrots and raisins and combine well.
- form medium size or large thick cookies and place on a parchment lined baking pan.
- bake at 350 degrees for 16-19 minutes depending on size and thickness (for 4 large cookies bake closer to 20). cool down completely. then, add frosting to the center of the cookies and enjoy!
- store in the fridge or freezer in an airtight container.
