when it comes to cookies, there are all kinds textures but here, i aimed for soft and chewy, which is what i achieved.

you’re going to adore the taste too! cinnamon and vanilla extract really bring out the flavors of the carrots.

raisins add some fabulous sweetness too! the batter is sweetened with coconut sugar and agave.

there’s plenty of sweetness between the sweetener, raisins and vanilla store-bought frosting.

you can make your own frosting if you don’t want to use store-bought but i love Miss Jones and Simple Mills.

the ingredients are awesome and the flavor is amazing!

when it comes to vegan carrot cake recipes, i like to mix things up and add a variety of textures.

sometimes, that includes raisins and other times, walnuts. there aren’t any walnuts in this recipe but you’re more than welcome to add some!

here’s a pro tip! i know i’ve said this before but just in case anyone missed it, do NOT grate your carrots by hand, it’s such a waste of time and energy lol.

throw 3 large carrots cut into smaller pieces in the food processor and blend away on high.

you will get the perfect “grated” texture every single time.

3 carrots should definitely give you about a cup, which is what you need for this recipe.

Vegan and Gluten Free Carrot Cake Cream Pies

yields 4-6 cookies depending on how large you make them


  • 1 cup almond flour

  • 1 cup gluten free all purpose flour

  • 2 tbsp flax meal

  • 1/4 cup coconut sugar

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 2 tsp vanilla extract

  • 1 cup grated carrot

  • 1/4 cup agave 

    2 tbsp runny almond butter

  • 1/4 cup almond milk

  • 1/2 cup raisins

  • frosting-in the food processor, i blended 1/2 cup vegan cream cheese and 1/2 cup simple mills frosting)


  • preheat the oven to 350 degrees.
  • mix the wet and dry ingredients until a thick dough forms and then fold in the carrots and raisins and combine well.
  • form medium size or large thick cookies and place on a parchment lined baking pan.
  • bake at 350 degrees for 16-19 minutes depending on size and thickness (for 4 large cookies bake closer to 20). cool down completely. then, add frosting to the center of the cookies and enjoy!
  • store in the fridge or freezer in an airtight container.
