happy wednesday babes! we are halfway through the week and that’s a beautiful thing. one of my favorite breakfasts or even desserts is baked oats. The Best Vegan Brownie Baked Oats is healthy enough to be your breakfast as there is no added sugar and it’s packed with nutrients, but also, decadent enough for dessert.
the ingredients are SO minimal and delicious, that you likely have everything you need already to make this recipe.
from old fashioned oats, to banana and cocoa powder, everything is basically a pantry or kitchen staple.
you will need a nut butter or seed butter in this recipe as it acts as a binder.

i used a heaping tbsp of peanut butter, which gives this deliciousness a slight hint of it but anything works.
the trio of all trios in my opinion are bananas, chocolate and peanut butter, so you just can’t go wrong.

yep, tiny mess and barely any cleanup, plus you don’t have to mash the banana or stir anything, that’s my kind of recipe.

you add the batter to a ramekin and bake in the oven for 25 minutes.
to keep the recipe no added sugar, just don’t add any chocolate chips to the top like i did.
however, if that isn’t a concern to you, i very much recommend the chocolate chips because whoooo doesn’t love a little extra chocolate?!

the consistency is like oatmeal but more cooked through, it’s perfect! nice and fudgy yet there’s somewhat of a cake-like texture.
honestly, i love me some oatmeal but baked oats seems like the way to go for texture purposes.
you can mix it up by the way when it comes to add-ins! while chocolate chips are fun, so are walnuts, pecans, marhsmallows, sprinkles and more.
baked oats are so great when it comes to versatility and creativity.

The Vegan Best Brownie Baked Oats

3/4 cup old fashioned oats
2 tbsp cocoa powder
1/2 tsp baking powder
1 tsp vanilla extract
1 overripe banana
1 heaping tbsp peanut butter
1/2 cup unsweetened dairy free milk
Directions
- preheat the oven to 350 degrees.
- add all ingredients to a blender and blend until a smooth consistency forms. pour into a single serving ramekin.
- add chocolate chips to the top if you want and bake at 350 degrees for 25 minutes. enjoy!
