The Best Tahini Cookie Crisp Cereal

when i was little, Cookie Crisp cereal was a weekend treat that i looked forward to all week long. now, in my adult life, i had to recreate this goodness! please welcome The Best Tahini Cookie Crisp Cereal!

it’s hard to tell you just how good this cereal is, so you have to try it yourself! good luck not eating 3 bowls full because the cereal is addicting. who knew so few ingredients could create such magical food?!

there are some key ingredients that you’re going to need to achieve the cookie flavor and i’ll go over them below!

the texture is LEGIT! the outside is harder like traditional Cookie Crisp and then the center is soft and chewy. oh my gosh, the cereal will actually melt in your mouth.

if cereal doesn’t sound appealing, the lil cookies make a great snack without dairy free milk. however, i do suggest adding milk because it’s like dunking your cookies all at once.

the cookies do get soggy pretty quickly,ย so don’t pour the milk over them until you’re ready to eat!

alright, you could totally just eat the cookie dough and skip the cereal altogether but i say, save a few bites as cookie dough and bake the rest!

here’s what you’re going to need!

  • almond flour

  • organic cane sugar

  • tahini

  • coconut oil

  • creamer- used califia farms oat milk creamer specifically, but any works!

  • mini chocolate chips- used Endangered Species Oat Milk baking chips

the creamer is really important! it helps give the dough that the Cookie Crisp flavor. feel free to use whatever brand you want. i would say the best sub would be full fat coconut milk, but the flavor won’t be as good.

love that this cereal is dairy-free, egg-free and grain-free!! it’s the best when you can still enjoy a classic but ya know, vegan and made better for you. trust me, you won’t even miss the original.

see the pic below for a size reference! you can totally make yours larger or smaller if you would like, but adjust the baking time. if they’re smaller than mine, try 10-12 minutes and if the same size, 15 minutes.

how to make The Best Tahini Cookie Crisp Cereal:

  • preheat the oven to 350 degrees, and line with parchment paper.

  • in a mixing bowl, add the dry ingredients first and then mix in the wet ones until a thick dough forms.

  • fold in the chocolate chips and mix well.

  • roll about 2 tsp worth of dough into your hand and form into a circle. i did not flatten mine.

  • bake in oven for 15 minutes (less if smaller) then let it cool for about 15 minutes.

  • enjoy with your favorite dairy free milk! i suggest storing in an airtight container.

Ingredients

  • 1.5 cups almond flour

  • 1/4 cup organic cane sugar

  • 1/4 cup runny tahini- make sure it’s runny and trader joes is what i used

  • 1 tbsp room temp coconut oil

  • 1/4 cup dairy free creamer- see post for brand used

  • 1/4 cup mini chocolate chips or however much you want
