Super Creamy Sweet Potato Mac and CheeseCourse: 30 Minutes, Lunch u0026amp; Dinner, Pasta
1 large hannah sweet potato
1/4 cup vegan cream cheese
2 tbsp nutritional yeast
1 tbsp minced garlic
1 tsp onion powder
1 cup dairy free plain milk
sea salt and pepper to taste
- 1 and 1/2 boxes pasta of your choosing
- 1/2 cup vegan shredded cheese
- cut the sweet potato into slices and boil for about 12-15 minutes or until the slices are easily pierced with a fork.
- add all of the sauce ingredients to a blender and blend until a smooth sauce forms.
- add to your favorite cooked pasta and vegan shredded cheese and warm through completely on the stove.
- store in the fridge in an airtight container and enjoy!
