true story, i’ve never met a potato i didn’t like. it doesn’t matter if they’re baked or fried, i’m the ultimate fan of potatoes. i guess who isn’t, potatoes are just so dang good. add a lil sea salt, avocado oil and pair baked potato wedges with a mouth-watering sauce, you have yourself a top notch meal. the garlic sauce i made ya is out of this world. it’s packed with garlic (obviously lol), fresh basil, pine nuts, and dijon mustard. describing this is making me hungry again and i just ate.


serve this as a side dish, take it to a get together, or just straight up eat them off the baking tray all by yourself and watch Real Housewives. i may have done the last one & it was glorious.

ingredients
- 5 medium size russet potatoes cut into thin wedges
- 2 tbsp avocado oil
- 1/2 tsp sea salt
toss the potato wedges with the avocado oil and sea salt and bake at 400 degrees for 35 minutes. you can take them out half way through to flip but i didn’t because i forgot lol.
garlic sauce
- 1/2 cup vegetable stock
- 2 tbsp dijon mustard
- 1 large garlic clove
- handful fresh basil
- 1/4 cup pine nuts
blend in a food processor until a liquid consistency forms and pair with the roasted potatoes. enjoy!
