did you read the title and just get really excited about Vegan Semi-Homemade Baklava Cake?! well, if you love cake and you love baklava, look no further than this heavenly dessert.
if you happen to have a special occasion coming up, this cake should be on the menu.
the beauty of Vegan Semi-Homemade Baklava Cake is that you can skip all of the hassle of making a homemade cake and get right to it with your favorite boxed vanilla cake!

just check which ones are able to be made vegan and you have yourself a baking date! i used Miss Jones vanilla boxed cake mix and just followed the directions on the back to make it vegan.
then, to add some baklava flavor, a little bit of orange zest is added to the batter, along with cinnamon and allspice. ground cloves are typical, but i only had allspice, so that’s what i used!
as a greek gal, i grew up eating baklava like it was a food group, and my mom now makes me a vegan version that is divine!

she makes a homemade simple syrup and also uses agave, which is what i used for Vegan Semi-Homemade Baklava Cake.
the agave is mixed with walnuts, pistachios, cinnamon and a just a dash of allspice.
it can be added in between the cakes on top of vanilla frosting and also on the top for beautiful decor!
feel free to frost the whole cake, however, that just would have been too sweet for me.

as for the nuts, i have tried almonds, walnuts and pistachios. walnuts and pistachios are by far my favorite combo, so that’s what i went with!
you can try using other nuts of course, but i do think this is the tastiest combo :).

Vegan Semi-Homemade Baklava Cake

minutesNOTE: baking time will vary depending upon boxed vanilla cake mix you use. follow directions according to package directions.
Ingredients
- boxed vanilla cake of your choosing
1 tsp cinnamon
1/4 tsp allspice
1 tbsp orange zest
1/4 tsp almond extract
- vanilla frosting
- nut mixture
1 cup roasted pistachios
1 cup roasted or raw walnuts
1/3 cup agave
1/2 tsp cinnamon
dash of allspice
orange zest if wanted
Directions
- preheat the oven to whatever temperature the boxed cake mix calls for.
- make the cake batter according to package directions and add the remaining ingredients that i have listed into the batter.
- divide the cake into two 8 inch round pans if possible and bake according to directions.
- let the cakes cool down completely and add a thick layer of vanilla frosting. add the nuts to a food processor and pulse just a few times. then, add the additional ingredients.
- on top of the frosting, add the nut, spice and agave mixture. place the other cake layer on top. decorate the top of the cake with remaining nuts. enjoy!
