hey hey hey! happy monday my amazing friends! i have the yummiest recipe for you that will probably become your new go-to breakfast when you have a little extra time in the morning. Vegan Blender Blueberry Protein Pancakes are baked in the oven and are packed with protein + flavor.
although these are blueberry, you by no means have to add any blueberries or anything else.
however, do i think chocolate chips or something would be an amazing addition? why yes, yes i do.

in terms of recipe requests, i’ve gotten a lot for more protein focused recipes, so i think these pancakes are perfect.
you can use just about any protein powder you want really and i think vanilla is the best flavor with this combination.
two of my favorite brands are Silver Fern and Garden of Life, but there are truly so many amazing plant based protein powders out there!

so what’s super cool about these pancake gems? the way you make them! goodbye to messy pancakes you make on the stove.
these ones are actually baked and honestly, it’s my favorite way because i think it’s fail proof every time.
you can take a 1/4 cup measuring cup and scoop the batter onto a parchment lined baking tray. easy enough right? just use a spoon to smooth it out a little.

the sweetness comes from the protein powder depending on what you use but also, BANANA. probably my favorite pancake ingredient of all time.
if i can use bananas in a baked good or well anything really, i’m going to. you’re just going to need one medium size ripe banana by the way.
i mean, a generous serving of maple syrup is always a must when it comes to pancakes, so of course i went that route.
ooooh and a small ice cream scoop of buttah because you just cannot have epic pancakes without vegan butter.

this recipe is technically single serving and will yield about 4 pancakes, but if you want to share, go for it! good luck with that though lol.
they’re really filling too between the almond butter, protein powder and oats, so maybe you will want to share but i just know that Alex had to have a separate set because i wasn’t sharing these.
in terms of ingredients, i kept things beyond simple for you! here’s everything you need:
- old fashioned oats
- baking powder
- protein powder
- one banana
- apple cider vinegar
- almond butter or creamy nut/seed butter
- cinnamon
- dairy free milk
- frozen blueberries (fresh works too)

Vegan Blender Blueberry Protein Pancakes

Ingredients
1 cup oats
1 scoop vanilla protein powder
1/4 cup runny almond butter
1/2 cup dairy free milk
1 medium size ripe banana
1 tsp baking powder
1 tsp apple cider vinegar
1/2 tsp cinnamon
- 1/2 cup frozen blueberries
Directions
- preheat the oven to 350 degrees.
- add all ingredients but the blueberries to a high powered blender and blend until a thick batter forms.
- then, transfer batter to a bowl and fold in the blueberries. use 1/4 cup measuring cup to evenly distribute the pancakes and shape the top with a spoon.
- bake at 350 degrees for 22 minutes. serve with your favorite toppings and enjoy!
