The Best Vegan Blueberry Rolls

welcome The Best Vegan Blueberry Rolls! a take on The Best Vegan Cinnamon Rolls but ya know….BLUEBERRIES! they’re fresh, made with wholesome ingredients and the yummy breakfast you need this week.

oh my goodness, i love blueberries so flippin’ much. they make awesome additions to just about everything. from oatmeal, to toast, cakes and more, they’re it.

this yummy take on my original recipe requires few ingredients and the base is exactly the same. of course the filling is different though! a homemade blueb filling is involved, YUM.

my husband was SO excited to find these waiting on the counter when he got home. he had his with a warm cup of coffee, some banana slices and a sprinkle of cinnamon.

fancy fancy. i just ate one straight from the baking tray as if it was a donut hahah. it does make such a great brunch addition though if you’re looking for a more decadent weekend recipe.

isn’t that filling just gorgeous! the secret to getting a vibrant purple color is almond milk!

instead of water, that’s what i used but you can of course use water if you would like! you can also opt to not add any sweetener to your blueberry filling, but i do find it a bit necessary for taste.

after the filling is done cooking on the stove, i add a little bit of butter and a dash of vanilla extract. it’s so perfect.

what do you need for the roll?

  • all purpose organic unbleached flour

  • avocado oil OR extra virgin olive oil

  • rapid rise yeast

  • maple syrup

  • unsweetened almond milk

what do you need for the blueberry filling?

  • frozen blueberries

  • almond milk

  • maple syrup

  • vegan butter

  • vanilla extract

also, i do sprinkle some organic cane sugar directly onto the dough, about 3-4 tablespoons will do! if you want yours sweeter, just add more!

is the prep process easy?

yes! all you have to do is warm up the almond milk and then add the remaining wet ingredients and whisk them together.

then, add the rapid rise yeast, mix well and let it set for a couple of minutes. after that, you can add the flour and knead the dough.

do you have to refrigerate them?

so, for the Best Vegan Cinnamon Rolls i did but this time around, i wanted to see how they turned out without pre refrigeration.

the rolls turned out amazing after i baked them right away, but if you want, go ahead and refrigerate them overnight covered.

The Best Vegan Blueberry Rolls

Ingredients

  • 3.5 cups all purpose organic unbleached flour

  • 1 packet rapid rise yeast

  • 2 tbsp avocado oil or extra virgin olive oil

  • 1/2 cup maple syrup

  • 1 cup unsweetened almond milk

  • blueberry filling
  • 2 cups frozen blueberries

  • 1 cup unsweetened almond milk

  • 2 tbsp maple syrup

  • 1 tbsp vegan butter

  • 1/4 tsp vanilla extract

  • 4 tbsp organic cane sugar for sprinkling on dough
  • glaze
  • 1/2 cup vegan cream cheese

  • 2 tbsp maple syrup

  • a few tbsp almond milk to thin it out

Directions

  • heat the almond milk in the microwave for 1.5 minutes. then, add the maple syrup and avocado and whisk together.
  • transfer mixture to a large mixing bowl and sprinkle on yeast and mix well. let it sit for a couple of minutes.
  • add the flour (1/2 cup at a time and stir). once the dough is mixed well and sticky, transfer it to a lightly floured surface and knead for a couple of minutes or so.
  • on a lightly floured surface, roll out the dough into a thin rectangle (the thickness of the dough should be about 1/3 to 1/4-inch. then, sprinkle the cinnamon sugar mixture on top.
  • then, sprinkle the sugar on top of the dough.
  • for the blueberry sauce, add the frozen blueberries, almond milk and maple syrup to a large pan and cook on medium heat for 20 minutes or until it thickens and stir often. then, once it’s done cooking, add the vegan butter and vanilla extract.
  • let the sauce set for ten minutes to thicken and to avoid a huge mess on the counter, carefully spoon the filling on the dough.
  • starting at one end, tightly roll up the dough and situate seam side down. with a knife or string of floss, cut the dough into roughly 1.5- 2 inch sections and place in a greased 9 x 13 inch square baking pan.bake at 350 degrees for 25 minutes.
  • bake at 350 degrees for 27 minutes.
  • whisk the glaze ingredients together, pour on the top and enjoy!
