Protein-Packed Vegan No Chicken Salad

  • 16 ounces daring vegan chicken (baked and cut into pieces)
    1/2 cup thick and creamy coconut yogurt (such as culina or cocojune)
    1/4 cup vegan mayo
    3/4 cup chopped celery
    1/3-1/2 cup dried cherries or chopped dates
    1/3 cup chopped walnuts
    1 teaspoon garlic powder
    1 teaspoon onion powder
    1 tablespoon dijon mustard


  • preheat your oven to the temperature recommended for baking the daring vegan chicken or protein meat alternative.

  • place the daring vegan chicken on a baking sheet and bake according to package instructions until fully cooked. once baked, allow it to cool slightly before cutting it into bite-sized pieces.

  • in a large mixing bowl, combine the coconut yogurt, vegan mayo, chopped celery, dried cherries or chopped dates, chopped walnuts, garlic powder, onion powder, and dijon mustard.

  • add the baked and chopped daring vegan chicken to the mixing bowl with the other ingredients.
