Ingredients
2 bags romaine lettuce
1/2 cup vegan parmesan cheese
2 cups plant based breaded chicken
dressing
1/2 cup + 2 tbsp vegan mayo (used chosen)
juice of 1/2 lemon
2 grated garlic cloves
1 tbsp white miso paste
1/2 tsp dijon mustard
1/2 tsp onion powder
Instructions
whisk the dressing ingredients in a bowl until a smooth consistency.
add the romaine lettuce to a large bowl, pour 1/2 parmesan cheese on top and add the dressing.
mix well until the lettuce is evenly coated. then, add the vegan chicken.
store in the fridge in an airtight container and enjoy!
