No Bake PB & J Thumbprint Cookies

you probably know by now that i am obsessed with no bake desserts and these No Bake PB & J Thumbprint Cookies are a true must make!

if you love peanut butter and jelly but want an upgraded version of the classic, then make these cookies.

No Bake PB & J Thumbprint Cookies can be made in no time and are amazing treats to have on hand in the fridge or freezer.

if you store them in the freezer, just be sure to thaw the cookies before you eat them!

you won’t believe how minimal the ingredient list is to make No Bake PB & J Thumbprint Cookies!

you’re going to need almond flour and oat flour for the base.

to keep the cookies gluten free, just be sure to use a gluten free oat flour.

then, you’re going to need peanut butter of course :).

the peanut butter needs to be runny and there are some brands that i recommend.

crazy richard’s peanut butter is pretty runny along with whole foods 365 brand and trader joe’s.

any one of those would be great options but i am sure there are other runny ones out there. let me know what i am missing!

you can use any jam or jelly you want for No Bake PB & J Thumbprint Cookies. i went with an organic wild blueberry jam because that’s just my fave.

also, i drizzled some coconut butter on top, which is completely optional. i just love coconut butter and it looks pretty.

here’s everything you need to make No Bake PB & J Thumbprint Cookies

almond flour

oat flour

runny peanut butter

vanilla extract

dairy free milk

lakanto classic monkfruit sweetener (white sugar replacement)- you can use cane sugar too!

jam or jelly of your choosing

coconut butter and peanuts for topping if you want

No Bake PB & J Thumbprint Cookies

Ingredients

  • 1 cup almond flour

  • 2/3 cup oat flour

  • 1/4 cup lakanto classic monkfruit sweetener (white sugar replacement)- you can use cane sugar too!

  • 1 tsp vanilla extract

  • 1/2 cup runny peanut butter

  • 1/3 cup dairy free milk

  • jam for filling the center

Directions

  • use a mixing bowl to combine the cookie ingredients until a thick dough forms.
  • roll an ice cream scoop worth of dough into a ball and slightly flatten.
  • then, form an indent in the center of the cookies.
  • add a small spoonful of jam inside and then place the cookies in the freezer to set for 30-45 minutes.
  • you can drizzle coconut butter on top and add other toppings if you would like!
  • store in the fridge or freezer in an airtight container and thaw before eating.
