new & improved recipe update
this recipe is a new and improved version of one of my older chocolate bite recipes, and it’s better in every way.
instead of using maple syrup, i swapped in whole medjool dates, which not only naturally sweeten these bites but also add fiber and a richer, more fudgy texture.
i also added chocolate protein powder to make them more balanced and satisfying, turning what used to be more of a treat into a true protein-forward freezer snack.
the result is a bite that’s lower on the blood sugar spike, higher in protein, and still tastes completely indulgent. honestly, i don’t think i’ll ever go back to the old version.

substitution options
- protein powder: chocolate plant-based or whey both work; vanilla protein + extra cocoa powder is also great
- almond butter: sub cashew butter or peanut butter for a slightly different flavor profile
- dairy-free milk: any milk works here — almond, oat, or coconut
- chocolate coating: use dark chocolate or date-sweetened chocolate if preferred
storage
store these bites in an airtight container in the freezer for up to 2 months.
they can also be kept in the fridge for about 1 week, but the freezer gives the best texture and keeps the chocolate shell perfectly snappyy!

Date-Sweetened Chocolate Protein Truffles (Freezer-Friendly)

Ingredients
1/2 cup chocolate protein powder
1/4 cup cocoa powder
1 tsp vanilla paste
1 tbsp dairy-free milk, plus more as needed
1 cup pitted medjool dates
1/2 cup runny almond butter
chocolate coating
2/3 cup unsweetened chocolate chips
1 tsp coconut oil
Directions
- add the protein powder, cocoa powder, vanilla paste, dairy-free milk, dates, and almond butter to a food processor. blend until thick, smooth, and fudgy.
- if the mixture feels too wet, add 1 more tbsp cocoa powder. if it feels too dry or crumbly, add a small splash of dairy-free milk and blend again.
- roll the mixture into 7 bites (or your preferred size) and place on a parchment-lined plate or tray. freeze for 1 hour.
- melt the chocolate chips and coconut oil together until smooth. dip each frozen bite into the melted chocolate, coating fully. place back on parchment.
- freeze for another 30 minutes, until the chocolate shell is set. store in the freezer or fridge and enjoy straight from cold.

I am working on my metabolic health and dates spike my glucose what are your thoughts on using a monk fruit with all use sweetener instead and if you think it would work what would your guess on quantity be
