Ingredients
1/2cupchocolate protein powder
1/4cupcocoa powder
1tspvanilla paste
1tbspdairy-free milkplus more as needed
1cuppitted medjool dates
1/2cuprunny almond butter
chocolate coating
2/3cupunsweetened chocolate chips
1tspcoconut oil
Instructions
add the protein powder, cocoa powder, vanilla paste, dairy-free milk, dates, and almond butter to a food processor. blend until thick, smooth, and fudgy.
if the mixture feels too wet, add 1 more tbsp cocoa powder. if it feels too dry or crumbly, add a small splash of dairy-free milk and blend again.
roll the mixture into 7 bites (or your preferred size) and place on a parchment-lined plate or tray. freeze for 1 hour.
melt the chocolate chips and coconut oil together until smooth. dip each frozen bite into the melted chocolate, coating fully. place back on parchment.
freeze for another 30 minutes, until the chocolate shell is set. store in the freezer or fridge and enjoy straight from cold.
