if you’ve been craving soft, pillowy restaurant-style flatbread but want a healthier, gluten-free option, this cheesy cottage cheese flatbread is going to be your new obsession.
it’s easy to make, packed with protein, and bakes up golden, bubbly, and so satisfying.

taste + texture
this flatbread is everything you want: soft, chewy, slightly tangy from the cottage cheese, and topped with melty mozzarella.
cooking it first on the stove gives that beautiful golden blistering you’d expect from restaurant naan or pita, and finishing in the oven ensures the inside is fully cooked but still tender.
this flatbread is soft and pillowy with a chewy bite that makes it feel hearty and satisfying.
the cottage cheese gives it a unique elasticity you don’t always get in gluten-free breads — almost like the springy texture of restaurant-style naan.
it’s golden and bubbly on the outside, tender in the middle, and topped with melted mozzarella for that indulgent finish.

why it’s healthy
this flatbread is a lighter, healthier take on traditional restaurant flatbread. here’s why:
- protein boost: cottage cheese and mozzarella give you over 10 grams of protein per serving.
- gluten-free: made with gluten-free 1:1 flour so everyone can enjoy it.
- lower in fat than traditional cheese breads, but still rich and satisfying.
- nutrient-dense: cottage cheese adds calcium, while gluten-free flour blends often include rice and sorghum flours for added nutrition.
tips + tricks for perfect flatbread
- blend your cottage cheese before making the dough so the texture is smooth.
- don’t skip the skillet step — it gives that classic golden blistering you can’t get from the oven alone.
- roll thicker (about 1/4 inch) if you want pillowy bread, or thinner for a wrap-style flatbread.
- cover while cooking to trap steam and keep the bread extra soft.
- finish in the oven to guarantee it’s cooked through, especially if you go thicker.
topping options
mozzarella is classic, but you can switch things up depending on the vibe:
- garlic butter + parmesan for a garlic bread feel.
- feta + oregano for a mediterranean touch.
- cheddar + jalapeño if you want a little spice.
- olive oil + fresh herbs for something lighter.
you can even skip the cheese and use this as a base for flatbread pizzas.

storage
this flatbread keeps really well:
- fridge: store leftovers in an airtight container up to 3 days. reheat in the oven or toaster oven.
- freezer: freeze flatbreads between parchment sheets, then warm straight from frozen in a hot skillet or oven.
- reheat: always better warmed — it brings back the softness and melty cheese topping.
