how it works: whip first, then fold

the trick to getting a thick, cloud-like whip is to beat the hot coffee, coconut sugar, and boiling water first — just those three ingredients.

once that’s fully whipped and stable, fold in vanilla paste and your favorite vanilla protein powder, and beat again until creamy and smooth.

this two-step method gives you the best texture and structure.

rich flavor, airy texture

the whipped layer is light and velvety, almost like a cold foam, and melts perfectly into the iced milk below.

since adding protein powder, the whip becomes just slightly less airy than traditional dalgona coffee — but it’s a delicious tradeoff for the extra protein boost.

ingredients

  • 1 tbsp instant coffee
  • 1 tbsp coconut sugar (or to taste)
  • 2 tbsp boiling hot water
  • 1/4 tsp vanilla bean paste (or vanilla extract)
  • 1 tbsp vanilla protein powder
  • ice + 1 cup unsweetened dairy-free milk (almond, oat, etc.)

instructions

  1. in a medium mixing bowl, combine instant coffee, coconut sugar, and boiling hot water.
  2. using an electric hand mixer, beat the mixture on high for 3–4 minutes, or until it becomes light, thick, and fully whipped.
  3. gently fold in the vanilla paste and vanilla protein powder.
  4. beat again on the highest setting for another 1–2 minutes, until smooth and fluffy.
  5. fill a glass with ice and 1 cup of dairy-free milk, then spoon the whipped coffee mixture on top.
  6. enjoy immediately while the whip is fresh and foamy. stir if desired.
