1 tbsp instant coffee 1 tbsp coconut sugar 2 tbsp boiling hot water 1/4 tsp vanilla paste 1 tbsp vanilla protein powder (plant-based) 1 cup unsweetened almond milk

in a medium mixing bowl (rec glass or stainless steel), combine instant coffee, coconut sugar, and boiling hot water.
using an electric hand mixer, beat the mixture on high for 3–4 minutes, or until it becomes light, thick, and fully whipped.
gently fold in the vanilla paste and vanilla protein powder. beat again on the highest setting for another 1–2 minutes, until smooth and fluffy.
fill a glass with ice and 1 cup of dairy-free milk, then spoon the whipped coffee mixture on top. enjoy immediately while the whip is fresh and foamy. stir if desired.
