ingredient highlights

the pistachio butter is the star of the show, giving the cheesecake layer its unique flavor and vibrant color.

maple syrup adds natural sweetness, while the vegan cream cheese brings a luscious creaminess.

everything comes together to create a dessert that’s both indulgent and lighter than traditional cheesecake!

making your own pistachio butter

while you can use store-bought pistachio butter, making your own is easy and fun. here’s how:

  • start with roasted, unsalted pistachios. you can roast them yourself in the oven at 350°f for about 8-10 minutes if needed.
  • add the pistachios to a high-speed blender or food processor.
  • blend until smooth, stopping occasionally to scrape down the sides. this can take about 5-10 minutes, depending on your machine. if the pistachios are struggling to blend, you can add a teaspoon of neutral oil, like avocado oil.
  • store your pistachio butter in an airtight container in the fridge for up to a month.

healthy pistachio butter brands

if you prefer to buy pistachio butter, here are a few great brands that offer high-quality options:

  • spread the love: their pistachio butter is made with just pistachios and no added oils or sugars.
  • nuts‘n more pistachio butter: a protein-packed option with a slightly sweetened twist.

how to make these brownie cups

  1. make the brownie base: blend almond flour, flax meal, almond butter, medjool dates, cocoa powder, dairy-free milk, vanilla extract, and maple syrup in a food processor until it forms a sticky dough. press this into the bottom of a lined muffin tin or silicone molds.
  2. prepare the cheesecake filling: whisk or blend softened vegan cream cheese, pistachio butter, maple syrup, and vanilla extract until smooth. spoon this mixture over the brownie base.
  3. freeze: let the cups set in the freezer for several hours until firm.
  4. add toppings (optional): once set, top the cups with cookies if wanted, melted chocolate, and chopped pistachios for extra flair.

storage tips

these no bake pistachio cheesecake brownie cups are best stored in the freezer in an airtight container.

they’ll keep for up to two weeks. before serving, let them sit at room temperature for a bit to soften slightly for the perfect texture.

why you’ll love them

they’re creamy, chocolatey, nutty, and perfectly sweet—a dessert that’s indulgent enough for special occasions yet simple enough to make anytime you’re craving something decadent!

whether you’re a pistachio lover or just looking to try something new, these cups are guaranteed to impress.
