The goal of this recipe wasn’t to hide the fish, it was to balance it.

Roasted sweet potato naturally softens the bold flavor while adding creaminess. Garlic, onion, dill, and parsley brighten everything up, and a little cheese ties it all together. Wrapped in crisp, flaky phyllo, every bite has contrast in both texture and flavor.

Ingredients

Filling

  • 1 large sweet potato
  • 2 packets Patagonia Provisions sardines or anchovies
  • 2/3 cup shredded mozzarella or crumbled feta
  • 2 tbsp extra virgin olive oil
  • 2 tbsp minced garlic
  • 1/2 small yellow onion, finely diced
  • Handful fresh dill, chopped
  • Handful fresh parsley, chopped
  • Sea salt and black pepper, to taste

For the Pockets

  • 10 sheets phyllo dough (2 sheets per pocket)
  • Olive oil, for brushing

Tips for Success

  • Roast the sweet potato until it’s very soft so the filling becomes extra creamy.
  • Don’t worry about removing the tiny bones from the canned sardines or anchovies—they’re completely edible, soften during processing, and provide valuable calcium.
  • If using anchovies, taste the filling before adding extra salt since they can be saltier than sardines.
  • Keep unused phyllo covered with a slightly damp towel while assembling so it doesn’t dry out.
  • An air fryer is a great way to reheat leftovers and restore their crispy texture.

Ingredients
  

  • Filling
  • 1 large sweet potato
  • 2 packets Patagonia Provisions sardines or anchovies
  • 2/3 cup shredded mozzarella or crumbled feta
  • 2 tbsp extra virgin olive oil
  • 2 tbsp minced garlic
  • 1/2 small yellow onion finely diced
  • Handful fresh dill chopped
  • Handful fresh parsley chopped
  • Sea salt and black pepper to taste
  • For the Pockets
  • 10 sheets phyllo dough 2 sheets per pocket
  • Olive oil for brushing

Method
 

  1. Preheat the oven to 400°F.
  2. Cut the sweet potato into small cubes and roast the sweet potato for 25-30 minutes, or until fork tender. Allow it to cool slightly, then peel and mash until smooth.
  3. Heat the olive oil in a skillet over medium heat. Cook the onion until softened, about 5 minutes. Stir in the garlic and cook for another 30–60 seconds.
  4. Add the onion mixture to the mashed sweet potato along with the sardines or anchovies, cheese, dill, parsley, sea salt, and pepper. Mash everything together until evenly combined.
  5. Assemble the Pockets
  6. Lay one sheet of phyllo on a clean surface and lightly brush with olive oil.
  7. Place a second sheet on top and brush again.
  8. Spoon about 1/3 cup of filling into the center, shaping it into a compact square.
  9. Fold the bottom edge over the filling.
  10. Fold the top edge down.
  11. Fold the left side toward the center.
  12. Fold the right side over the top, creating a sealed square parcel.
  13. Flip the pocket over so the seam faces down.
  14. Brush the top lightly with olive oil.
  15. Repeat with the remaining filling.
  16. Bake for 18–20 minutes, or until the phyllo is deeply golden and crisp.
  17. Serve warm with the Greek yogurt sauce, if desired.
