  • 1 cup low-fat cottage cheese
  • 1 tbsp peanut butter
  • 4 large medjool dates pitted
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 2/3 cup dairy-free soy milk plain, unsweetened

Method
 

  1. add all ingredients to a high-speed blender or food processor.
  2. blend until completely smooth and creamy, scraping down the sides as needed.
  3. pour the mixture into a freezer-safe container and freeze for at least 4-6 hours or until firm.
  4. let sit at room temperature for a few minutes before scooping.

  1. This was decadent. I made half of the recipe not realizing it would only fill up about half of my 7 setting Creami pint. I used Vanilla Protein powder, used Cashew milk, and used a tbsp of Peanut butter because why not. The texture was divine. Thank you!

  2. I don’t have a ninja creami, but I have an ice cream maker. Could I put the blended mixture in there?

  3. Have you ever tried it with a beef isolate protein powder like Equip? I don’t think they have the same emulsifiers as the plant based kinds but maybe if I also added xantham gum?
