Healthy 8-Ingredient Homemade Energy Bars

it’s monday so we NEED all of the extra energy we can get, right?! well, i know that i do. Healthy 8-Ingredient Homemade Energy Bars are a burst of a deliciousness that you can easily take with you on the go during the day!

with only 8 ingredients and allllll of the healthy fats, you can have the easiest, yummiest and HEALTHIEST homemade energy bars made in no time.

they’re lower in sugar but absolutely will satisfy your sweet tooth and we love that, right?! lightly sweetened with only 1/4 cup coconut sugar, they’re just sweet enough.

as for the chocolate drizzle on top, the chocolate that i used didn’t have any added sugar, but use whatever you want to!

i am totally obsessed with homemade bars of any sort really! there are some amazing ones you can buy at the store, but sometimes, it’s just so fun to make your own.

plus, you have full control of ingredients and such, which is always a huge pro! for this recipe, i wanted the bars to be rich in healthy fats to keep us full longer and minimally sweet, ya know, less dessert like.

this was my second time making the bars and the first time i used maple syrup!

had to make a few tweaks this time, like i didn’t have to add almond flour to this version for example, and now they’re perfect!

the bars totally need nut or seed butter for binding, so i used almond butter! you can absolutely make swaps, and anything is going to work!

this time around, i did not use a runny almond butter.

the brand i used is Maranatha! it’s important for my baked goods recipes to have a runny nut or seed butter, but for this particular no bake recipe made in the food processor, not necessary!

peanut butter would be really delicious, but i chose almond butter instead because peanut butter can be very overpowering in taste, and i wanted the bars to take on the flavors of the other ingredients.

so what all did i use in this recipe?!

  • raw almonds

  • raw cashews

  • oats

  • shredded coconut

  • coconut sugar

  • almond butter

  • almond milk

  • chocolate chunks

the bars just have to set in the fridge for a few hours and i placed the mixture in an 8 x 8 baking pan lined with parchment paper.

i did drizzle some melted chocolate on top and then some flakes of sea salt because…yum!

you can store the bars in the fridge or the freezer and thaw them before eating!

Healthy 8-Ingredient Homemade Energy Bars

Ingredients

  • 3/4 cup almonds

  • 1 cup cashew pieces

  • 1 cup old fashioned oats

  • 1/2 cup shredded coconut

  • 1/4 cup coconut sugar

  • 1/3 cup almond butter

  • 1/4 cup almond milk

  • 1/2 bar dark chocolate cut into small pieces

Directions

  • add all ingredients but the dark chocolate chunks to a food processor and blend until a thick, grainy and sticky consistency forms.
  • fold in the dark chocolate pieces and add to an 8 x 8 parchment paper lined baking tray. flatten completely and place in the fridge for 2 hours +.
  • cut into bars, enjoy and store in the fridge or freezer in an airtight container.
