Instead of banana, which you’ll find in a lot of my healthier quick breads, kefir adds moisture and a subtle tang that pairs SO well with pumpkin and warm spices.

We’re also adding vanilla protein powder to give this loaf a protein boost. Each slice has approximately 14 grams of protein before the glaze, making it such a satisfying option for breakfast, a snack or a healthier fall dessert.

In this pumpkin bread, the kefir adds moisture while its acidity works beautifully with the baking soda to help create a tender quick bread.

A Pumpkin Protein Bread That Actually Tastes Like Pumpkin Bread

Adding protein powder to baked goods can be tricky. Too much can leave a loaf dry, rubbery or overly dense.

For this recipe, 1/2 cup vanilla protein powder gives us a substantial protein boost without taking over the texture or flavor of the bread.

The pumpkin purée, whole milk kefir and nut butter all contribute moisture and richness, while oat flour and almond flour create a soft gluten-free base.

The result is a protein pumpkin bread that still feels like a cozy fall treat rather than a protein bar disguised as bread.

The Kefir Glaze

The glaze might be my favorite part.

Instead of using milk or water with powdered sugar, we’re using Lifeway Plain Kefir. Its subtle tang balances the sweetness of the powdered sugar and complements the pumpkin spice flavor perfectly.

You only need two ingredients: powdered sugar and kefir. Vanilla is optional but delicious.

Start with two tablespoons of kefir and gradually add more until you reach your desired consistency. You want the glaze thick enough to sit beautifully on top of the loaf while still being drizzleable.

Just make sure your pumpkin bread is completely cool before glazing or that gorgeous glaze will melt right into it.

Tips for the Best Pumpkin Protein Bread

Use pumpkin purée, not pumpkin pie filling. You want 100% pure pumpkin without added sugar or spices.

Don’t overmix the batter. Mix just until everything is incorporated to keep the loaf tender.

Protein powders vary. If you’re using a plant-based protein powder and the batter seems exceptionally thick, add 1–2 tablespoons of additional kefir.

Start checking early. Protein powder can make baked goods dry if they’re overbaked, so start checking the center around the 50-minute mark.

Let it cool. Pumpkin-based quick breads continue to set as they cool. Give the loaf at least 20 minutes in the pan before removing it, then allow it to cool completely on a cooling rack.

How to Store Pumpkin Protein Bread

Store the glazed bread in an airtight container in the refrigerator for up to about 4–5 days. Because the glaze contains kefir, I recommend refrigerating the finished loaf rather than leaving it at room temperature for an extended period.

You can enjoy a slice cold or allow it to come closer to room temperature before eating.

If you’re planning to freeze the bread, I recommend freezing it without the glaze. Slice the cooled loaf, wrap the individual slices and store them in a freezer-safe container. Then thaw as needed and add the kefir glaze after thawing.

Ingredients
  

  • 1 cup pumpkin purée
  • 3/4 cup Lifeway Organic Whole Milk Plain Kefir
  • 2 large eggs
  • 1/3 cup maple syrup
  • 1/3 cup coconut sugar
  • 1/4 cup runny almond butter or cashew butter
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 1 1/2 cups gluten-free oat flour
  • 1/2 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • Kefir Glaze
  • 1 cup powdered sugar
  • 2 –3 tablespoons Lifeway Plain Kefir
  • 1/2 teaspoon vanilla extract optional

Method
 

  1. Preheat the oven to 350°F and line or lightly grease a standard loaf pan.
  2. Add the pumpkin purée, kefir, eggs, maple syrup, coconut sugar, nut butter and vanilla to a large bowl. Whisk until smooth.
  3. Add the oat flour, almond flour, protein powder, baking soda, baking powder, pumpkin pie spice, cinnamon and sea salt. Mix just until a thick, uniform batter forms.
  4. Transfer the batter to the prepared loaf pan (used 1 lb caraway bread pan) and smooth out the top.
  5. Bake for 50–55 minutes, beginning to check around 50 minutes. The bread is done when the center is set and a toothpick inserted into the middle comes out mostly clean with a few moist crumbs.
  6. Allow the bread to cool in the pan for 15–20 minutes before transferring it to a cooling rack. Cool completely before glazing.
  7. For the glaze, whisk the powdered sugar with 2 tablespoons of kefir. Add additional kefir about 1 teaspoon at a time until you reach a thick but drizzleable consistency. Add vanilla if desired.
  8. Pour the glaze over the completely cooled loaf, slice and enjoy!
