Gluten-Free Pumpkin Protein Bread with Kefir Glaze Recipe

Ingredients
1cuppumpkin purée
3/4cupLifeway Organic Whole Milk Plain Kefir
2large eggs
1/3cupmaple syrup
1/3cupcoconut sugar
1/4cuprunny almond butter or cashew butter
1teaspoonvanilla extract or vanilla bean paste
1 1/2cupsgluten-free oat flour
1/2cupalmond flour
1/2cupvanilla protein powder
1teaspoonbaking soda
1teaspoonbaking powder
1 1/2teaspoonspumpkin pie spice
1/2teaspooncinnamon
1/4teaspoonsea salt
Kefir Glaze
1cuppowdered sugar
2–3 tablespoons Lifeway Plain Kefir
1/2teaspoonvanilla extractoptional
Instructions
Preheat the oven to 350°F and line or lightly grease a standard loaf pan.
Add the pumpkin purée, kefir, eggs, maple syrup, coconut sugar, nut butter and vanilla to a large bowl. Whisk until smooth.
Add the oat flour, almond flour, protein powder, baking soda, baking powder, pumpkin pie spice, cinnamon and sea salt. Mix just until a thick, uniform batter forms.
Transfer the batter to the prepared loaf pan (used 1 lb caraway bread pan) and smooth out the top.
Bake for 50–55 minutes, beginning to check around 50 minutes. The bread is done when the center is set and a toothpick inserted into the middle comes out mostly clean with a few moist crumbs.
Allow the bread to cool in the pan for 15–20 minutes before transferring it to a cooling rack. Cool completely before glazing.
For the glaze, whisk the powdered sugar with 2 tablespoons of kefir. Add additional kefir about 1 teaspoon at a time until you reach a thick but drizzleable consistency. Add vanilla if desired.
Pour the glaze over the completely cooled loaf, slice and enjoy!
