Ingredients

  • base ingredients (for 1 pint):
    1 cup whole milk greek yogurt
    1/2 cup full-fat canned coconut milk or heavy coconut cream
    1/8–1/4 cup honey (adjust to taste)
    1/2 tbsp vanilla bean paste (nielsen-massey — use paste, not extract)
    1/3 cup milk of choice

    healthy caramelized bananas topping
    2 ripe bananas, sliced
    1 tbsp extra virgin olive oil
    1 tbsp maple syrup
    pinch of sea salt
    1/4 tsp cinnamon

  • extra toppings: drizzle of extra virgin olive oil and honey

Directions

  • for the frozen greek yogurt base:
    in a blender or mixing bowl, combine the greek yogurt, coconut milk, honey, vanilla bean paste, and milk of choice. blend or whisk until completely smooth. pour the mixture into a ninja creami pint container. seal and freeze for at least 24 hours until completely solid.
  • for the caramelized bananas:
    heat 1 tbsp olive oil in a nonstick skillet over medium heat. add the sliced bananas in a single layer and cook undisturbed for 2–3 minutes, or until golden brown on the bottom. flip the slices and cook for another 1–2 minutes. drizzle with 1 tbsp maple syrup, add a pinch of sea salt, and a dash of cinnamon if using. cook for 1 additional minute, then remove from heat and let cool.
  • to spin in the ninja creami:
    after 24 hours, remove the pint from the freezer and let it sit at room temperature for 5–10 minutes. insert into the ninja creami and run the “ice cream” or “gelato” cycle. if it looks crumbly, add a splash of milk and run the “respin” cycle until smooth and creamy.
  • to serve:
    scoop into bowls and top generously with the caramelized bananas. optional toppings: crushed nuts, coconut flakes, or dark chocolate chips.
