These Nut-Free Date-Sweetened Beauty Bars are rich, chocolatey, naturally sweetened, and made with simple ingredients you may already have in your pantry. They have a soft, fudgy texture, a decadent chocolate shell, and require absolutely no baking.

If you’ve been following along with my Beauty Bar recipes, you know I love turning wholesome ingredients into treats that feel just as indulgent as dessert. This version might be one of my favorites yet because it’s nut-free, gluten-free, date-sweetened, and made with chocolate collagen powder.

The Medjool dates provide natural sweetness and help create that dense, brownie-like texture, while sunflower seed butter makes the bars creamy and satisfying without using peanuts or tree nuts. Gluten-free oat flour gives them structure, and cocoa powder doubles down on that rich chocolate flavor.

And, of course, we have the ingredient that earns these their Beauty Bar name: collagen powder. Collagen provides protein and amino acids that serve as building blocks for connective tissues in the body, including the skin. I love incorporating collagen into recipes like this because it’s such an easy way to add a little extra protein to an everyday treat.

Finish everything with a layer of melted date-sweetened or unsweetened chocolate, and you have the dreamiest freezer treat.

Tips for the Best Texture

Start with less milk. The moisture level of Medjool dates can vary quite a bit, so start with just 1 tablespoon. You want the mixture to be thick and sticky enough to hold together when pressed, not wet.

Use soft Medjool dates. If your dates are particularly firm or dry, soak them in hot water for about 5–10 minutes, then drain and pat them VERY dry before adding them to the food processor.

Press the base firmly. Really compacting the mixture into the loaf pan gives you dense, sturdy bars that slice beautifully once frozen.

Why I Call Them Beauty Bars

The name comes from the addition of collagen peptides. Collagen is a structural protein found naturally throughout the body and provides amino acids used in tissues including the skin, hair, nails, bones, and connective tissue.

But I also love that these bars take a more food-forward approach to the whole “beauty from within” idea. Along with collagen, you’re getting cocoa, oats, sunflower seed butter, and naturally sweet Medjool dates, all wrapped up in something that tastes like a chocolate dessert.

Basically, they’re my kind of beauty routine!!

Storage

Keep the bars in an airtight container in the freezer for up to 2 months. Place parchment between layers if you’re stacking them.

For the best texture, take a bar out of the freezer about 5–10 minutes before eating.

You Need:

  • 1 cup pitted Medjool dates
  • 1 cup gluten-free oat flour
  • ½ cup sunflower seed butter
  • ⅓ cup unsweetened cocoa powder
  • ⅓ cup chocolate collagen powder
  • 1 teaspoon vanilla extract
  • 1–4 tablespoons milk of choice, nut-free, as needed

For the Chocolate Topping

  • ½ cup melted date-sweetened or unsweetened chocolate

Ingredients
  

  • For the Beauty Bar Base
  • 1 cup pitted Medjool dates
  • 1 cup gluten-free oat flour
  • ½ cup sunflower seed butter
  • cup unsweetened cocoa powder
  • cup chocolate collagen powder
  • 1 teaspoon vanilla extract
  • 1 –4 tablespoons milk of choice nut-free, as needed
  • For the Chocolate Topping
  • ½ cup melted date-sweetened or unsweetened chocolate

Method
 

  1. Line a standard loaf pan with parchment paper, leaving enough overhang on the sides to easily lift the bars out later.
  2. Add the pitted Medjool dates, oat flour, sunflower seed butter, cocoa powder, chocolate collagen powder, vanilla extract, and 1 tablespoon milk to a food processor.
  3. Process until the ingredients begin to come together into a thick, fudgy dough. If the mixture seems too dry or crumbly, add additional milk 1 tablespoon at a time, processing between each addition. Depending on how soft your dates are and the consistency of your sunflower seed butter, you may need anywhere from 1–4 tablespoons total.
  4. Transfer the mixture to the prepared loaf pan. Press it down very firmly and evenly, smoothing the top with a spatula or your hands.
  5. Pour the melted chocolate over the top and spread it into an even layer.
  6. Transfer the loaf pan to the freezer for 2–4 hours, or until the bars are completely firm.
  7. Lift the mixture from the pan using the parchment paper. Allow it to sit at room temperature for a few minutes if needed for easier slicing, then cut into 8 bars.
  8. Store the bars in an airtight container in the freezer. Let one sit out for a few minutes before eating if you prefer a softer, fudgier texture.
