the filling is equally simple – a quick mix of vegan cream cheese, vegan butter, cocoa powder, maple syrup, and vanilla creates a creamy, rich layer.

spread it over the dough, roll it up, and pop it into the freezer to set.

once firm, slice into rolls and enjoy!

substitution options

  • don’t have almond butter? peanut butter or sunflower seed butter will work.
  • need a nut-free version? swap the almond flour for oat flour and the almond butter for tahini or sunflower seed butter.
  • you can adjust the sweetness by using more or less maple syrup in both the dough and the filling.

Ingredients
  

  • dough: 1/3 cup oat flour 1 cup almond flour 1/2 cup cocoa powder 1/3 cup maple syrup 1/3 cup runny almond butter 1 tsp vanilla extract adjustments for consistency: if the dough is too dry, add dairy-free milk, 1 tablespoon at a time, until you reach the desired consistency. if the dough is too thin, add oat flour, 1 tablespoon at a time, until it thickens.
  • chocolate filling: 1/3 cup vegan cream cheese 1/3 cup vegan butter 2 tbsp maple syrup (or to taste) 2 tbsp cocoa powder 1 tsp vanilla extract

Method
 

  1. make the dough: in a food processor or by hand, combine oat flour, almond flour, cocoa powder, maple syrup, almond butter, and vanilla extract. blend until a thick dough forms. adjust with dairy-free milk or oat flour as needed.
  2. roll out the dough: lay the dough on a sheet of parchment paper. cover with another sheet of parchment paper and roll into a large rectangle
  3. make the filling: without cleaning the food processor, combine the vegan cream cheese, vegan butter, maple syrup, cocoa powder, and vanilla extract. blend until smooth. you can also use an electric mixer or hand-mix.
  4. assemble the rolls: spread the chocolate filling evenly over the rolled-out dough. freeze for 20 minutes, then carefully roll into a log.
  5. chill and slice: place the log in the freezer for 1 hr until firm. remove from the freezer and slice into individual rolls. you can top with melted chocolate if desired.
  6. serve and store: enjoy immediately or store in the freezer. thaw rolls slightly before eating for the best texture.
