How To Make These Vegan

To make these vegan, simply swap the Greek yogurt for a thick dairy-free yogurt such as coconut, almond, or soy-based yogurt.

Replace the honey with maple syrup to keep the filling naturally sweetened. Choose a plant-based strawberry or vanilla protein powder, and make sure the cookies you use for the topping are dairy-free as well (Simple Mills Honey Thins if you’re ok with honey or another vegan vanilla cookie works great).

Thawing Tips!

Ingredients
  

  • base
  • 10 Medjool dates pitted
  • 1 cup gluten-free oats
  • 1/4 cup runny almond butter
  • 1 tsp vanilla extract
  • 1 –2 tbsp dairy-free milk
  • strawberry protein yogurt filling
  • 1 1/2 cups whole milk Greek yogurt
  • 1/2 cup strawberry protein powder
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • strawberry crunch topping
  • 2/3 cup vanilla cookies of choice Simple Mills Honey Thins work great
  • 2/3 cup freeze-dried strawberries

Method
 

  1. Step 1: Make the base
  2. Add the dates, oats, almond butter, vanilla extract, and 1 tablespoon dairy-free milk to a food processor. Blend until a sticky dough forms. If the mixture looks dry, add another tablespoon of milk.
  3. Press the mixture firmly into a parchment-lined 8×8 pan or similar small baking dish, creating an even layer.
  4. Step 2: Make the strawberry yogurt layer
  5. In a bowl, mix together the Greek yogurt, strawberry protein powder, honey, and vanilla extract until smooth and creamy.
  6. Spread the mixture evenly over the crust.
  7. Step 3: Make the strawberry crunch topping
  8. Add the vanilla cookies and freeze-dried strawberries to a food processor and pulse until crumbly.
  9. Sprinkle the mixture evenly over the yogurt layer and gently press it down so it sticks.
  10. Step 4: Freeze
  11. Place the pan in the freezer for 3–4 hours, or until completely firm.
  12. Once frozen, remove from the pan and slice into bars.
