Ingredients

  • 2 large overripe bananas
    1 cup medjool dates, pitted and softened (soak in warm water if firm)
    2 large eggs (or flax eggs: 2 tbsp flaxseed meal + 5 tbsp water)
    1/3 cup runny almond butter or peanut butter
    1 tsp vanilla extract
    1 1/2 cups rolled oats (gluten-free if needed)
    1 tsp cinnamon
    1/2 tsp baking soda
    1/2 tsp sea salt
    1/2 cup chocolate chips (use unsweetened or coconut/date sugar sweetened)

Directions

  • preheat oven to 350°f and grease or line an 8×8 baking dish with parchment paper.
  • in a food processor or blender, blend the bananas, softened dates, eggs, nut butter, and vanilla until completely smooth.
  • transfer the mixture to a large bowl and stir in the oats, cinnamon, baking soda, and sea salt. fold in the chocolate chips.

  • pour into the well greased or parchment lined baking dish and spread the batter evenly. sprinkle more chocolate chips on top if you like.

  • bake for 30-32 minutes, or until the top is golden and a toothpick inserted comes out mostly clean.
  • let cool for at least 20 minutes before slicing into bars.
