right now, i am all about the comfort food. Vegan Sweet Potato Stew makes me feel good all around. it’s good for my mind, body and soul. the cozy warmth, depth of flavor, nourishing ingredients and bold spices brings me joy. pairing Vegan Sweet Potato Stew with organic Jasmine rice is the move! Jasmine rice is delicious and i bought mine frozen from Trader Joe’s! you could also pair Vegan Sweet Potato Stew with quinoa, farro, cauliflower rice or even pasta!


doesn’t this stew have fall dinner written all over it?! i’m really craving the fall weather here in florida and we’ve been lucky with some 65 degree days! it’s wonderful! i’ll tell ya what though, i’m not going to miss winter in ohio lol.
also, i added delicious black beans to this stew for some protein! you can use any kind of beans though- chickpeas would be just as yummy! if you’re looking to add another type of veggie or greens of some sort, go for it because mostly everything works.

Vegan Sweet Potato Stew

2 tbsp avocado oil
1 cup diced red onions
2 large garlic cloves minced
6 cups cubed sweet potatoes
1 can black beans rinsed and drained (15 oz)
1 tsp turmeric
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp ginger
1/2 tsp sea salt
1/4 tsp all spice
4 cups vegetable broth
1 cup unsweetened plain almond milk
1 cup store-bought marinara (any works)
Directions
- sauté the onions and garlic in avocado oil on medium heat for 3 minutes.
- then, add the sweet potatoes and sauté another 5 minutes. stir often.
- next, add the black beans and spices and mix well. then, add the veggie broth, almond milk and marinara.
- cook for another hour and stir periodically.
- serve with rice if you would like and enjoy!
