it’s important to use a blender for this recipe so the batter is really smooth and blends seamlessly.
you will need 4 small-medium overripe bananas and will want to ensure they are overripe for optimal sweetness since there isn’t added sugar.
if you really want the batter itself to be sweet, i would recommend adding a couple of tbsp of coconut sugar or whichever kind of sugar you like.

Vegan Banana Bread Blueberry Sheet PancakesCourse: Breakfast, Pancakes
2 cups organic unbleached all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp cardamom (can omit if you don’t have it)
1/4 tsp cinnamon
pinch of sea salt
1 tsp vanilla extract
1/2 cup unsweetened creamy dairy free yogurt (used kite hill greek)
1 cup unsweetened coconut milk
4 small-medium size overripe bananas
- 1 cup blueberries
- preheat the oven to 350 degrees.
- add all but the blueberries to a blender and blend until a smooth batter forms.
- pour into a 9×13 inch baking sheet that has been greased well. add the blueberries to the top of the batter.
- bake at 350 degrees for 23 minutes. cool down a bit, cut into squares, serve with your favorites and enjoy!
- store in the fridge or freezer in an airtight container.
