The Ultimate Creamy Oatmeal

oatmeal can be tricky. some like theirs chewy with no liquid and others like a watery consistency. my preference is somewhere in between. if i’m in a hurry, this breakfast is perfect because it only takes 7 minutes to cook. the longer you cook oats and the more liquid you add, the creamier it becomes but i take a couple of shortcuts!

first, COCONUT CREAM! it is a literal dream. if you don’t like it, can’t find it or just want to use something else- try the following as a replacement:

full fat coconut milk, nut/seed butter or vegan butter. i find the texture turns out pretty creamy with nut or seed butter but the others will work too!

ok, so here’s the other trick to making this oatmeal super creamy. at the end, when it’s done cooking, you add another 1/2 cup of dairy free milk! the oatmeal won’t become water at all because it will actually absorb most of the dairy free milk you add.

the options for toppings are truly endless. i went with my signature warmed up frozen blueberries with a little more coconut cream. you can also use vegan yogurt or cream cheese instead of the coconut cream! anything goes because the oatmeal is a mild base and you can tailor the flavors to your liking.

serves 1-2 depending on portion size!

Ingredients

  • 1 cup old fashioned oats

  • 1.5 cups unsweetened almond milk (any dairy free works)

  • 1 cup water

  • 2 tbsp heavy coconut cream

  • optional add ins: 1 tbsp maple syrup, 1/4 tsp vanilla extract

Directions

  • add the oats, 1 cup of water, 2 tbsp coconut cream, 1 cup of almond milk and optional add ins to a pan.
  • once it comes to a boil, cook for 7 minutes on medium heat and stir often.
  • after the oats are done cooking, add another 1/2 cup almond milk.
  • stir well, top with your favorites and enjoy!
