the trio of trios…pasta, lemon and mushrooms. it’s as if all three foods were made to be combined together. Healthy Mushroom Pasta with Lemon Sauce has a light broth that is equal parts tart and delicious. one of my favorite toppings is actually vegan ricotta. i like to buy kite hill every now and then, ya know as a little splurge at Whole Foods.
Healthy Mushroom Pasta with Lemon Sauce seemed like the perfect excuse to buy some. oh and then top it all off with some fresh dill…dang!
alright, so this meal is actually done within 10 minutes, excluding prep time. you can just cook some pasta separately, and then in a large pan, you sauté the mushrooms in olive oil for a couple of minutes. then, you add the vegetable broth, fresh lemon juice and spices.
on those days that you want something so nourishing and hearty yet healthy, this is a wonderful choice. it should be about four servings and you can always add more veggies to give the meal more substance.
you just will want to add more vegetable broth if you add more veggies and also, choose ones that go well with lemon. i recommend Brussels sprouts or asparagus!
ah look at those pine nuts! one of my faves and NOT just for pesto :). i actually try to incorporate them into as many dishes as possible.

- shiitake mushrooms
- sliced portobello mushrooms
- 2 small lemons
- vegetable broth
- olive oil
- onion powder
- garlic powder
- sea salt
- pine nuts
don’t get me wrong, i adore a heavy vegan cream sauce, but sometimes, something super light and brothy does the trick. with minimal ingredients, you can have a pasta dish that feels like a restaurant style dish.
also, my grocery store had a few different varieties of mushroom and i couldn’t choose between which ones i wanted to use….so both!
Healthy Mushroom Pasta with Lemon SauceCourse: 10 Ingredients, Lunch & Dinner, PastaDifficulty: Easy
1 box pasta of choice
8 oz sliced portobello mushrooms
8 oz shiitake mushrooms
juice of 2 small lemons
2 tbsp extra virgin olive oil
1 cup vegetable broth
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp sea salt or however much desired
1/3 cup pine nuts
- cook the pasta according to package directions.
- sauté the mushrooms in olive oil for 2 minutes on medium heat.
- then, add the remaining ingredients- veggie broth, lemon juice and spices.
- cook an additional 8 minutes or until the sauce becomes thicker and then mix in the pine nuts. combine with the pasta and enjoy!
