Ingredients

  • for the buffalo cauliflower wings:
    2 heads cauliflower, cut into florets
    1 cup gluten-free all-purpose flour
    1 tbsp gluten-free cornstarch
    2 tbsp flax meal
    1/2 tbsp apple cider vinegar
    1 tsp garlic powder
    1 tsp onion powder
    sea salt, to taste
    1 and 1/4 cup unsweetened almond milk
    1 bottle buffalo sauce

    for the plant-based ranch:
    1/2 cup thick coconut yogurt (such as Cocojune)
    1/3 cup vegan mayo
    1/2-1 tbsp dried dill weed
    1/2 tbsp finely minced garlic
    1 tsp onion powder
    1/8 tsp paprika powder
    1/2 tbsp apple cider vinegar
    sea salt, to taste

Directions

  • preheat the oven to 425°F and line a large baking sheet with parchment paper.
  • in a mixing bowl, combine the gluten-free flour, cornstarch, flax meal, garlic powder, onion powder, and sea salt. add the almond milk and apple cider vinegar, then whisk until a smooth, semi-thick batter forms.
  • dip each cauliflower floret into the batter or coat all of it in a large bowl, tapping off the excess. place on the prepared baking sheet in a single layer.
  • bake for 25 minutes, until the cauliflower is starting to crisp and become golden.
  • remove the cauliflower from the oven, toss the florets in buffalo sauce, and return to the oven. bake for an additional 15 minutes, until the wings are crispy and fully coated.
  • while the wings bake, mix the coconut yogurt, vegan mayo, dried dill, minced garlic, onion powder, chili powder, apple cider vinegar, and sea salt in a bowl to make the plant-based ranch. taste and adjust seasoning as needed.
  • serve the buffalo cauliflower wings hot with the plant-based ranch on the side for dipping. enjoy!
