Easy Dairy Free Gingerbread Chia Pudding

Ingredients

  • 1 cup coconut milk (or any dairy free)
    1 1/2 tbsp maple syrup
    1 tbsp molasses
    3 tbsp chia seeds
    1/2 tsp ground cinnamon
    1/4 tsp ground ginger
    1/8 tsp ground cloves
    1/8 tsp ground nutmeg
    pinch of sea salt

  • top with dairy free yogurt and cinnamon/coconut sugar if wanted!

Directions

  • in a mixing bowl, whisk together the coconut milk, maple syrup, molasses, cinnamon, ginger, cloves, nutmeg, and sea salt until smooth. add the chia seeds and stir well to combine.

  • let the mixture sit for 5 minutes, then stir again to prevent clumping.
  • cover and refrigerate for at least 2 hours, or overnight, until the chia seeds absorb the liquid and the pudding thickens.
  • give it a good stir before serving and enjoy! top with your favorites :).
