1 cup coconut milk (or any dairy free) 1 1/2 tbsp maple syrup 1 tbsp molasses 3 tbsp chia seeds 1/2 tsp ground cinnamon 1/4 tsp ground ginger 1/8 tsp ground cloves 1/8 tsp ground nutmeg pinch of sea salt
top with dairy free yogurt and cinnamon/coconut sugar if wanted!
Instructions
in a mixing bowl, whisk together the coconut milk, maple syrup, molasses, cinnamon, ginger, cloves, nutmeg, and sea salt until smooth. add the chia seeds and stir well to combine.
let the mixture sit for 5 minutes, then stir again to prevent clumping.
cover and refrigerate for at least 2 hours, or overnight, until the chia seeds absorb the liquid and the pudding thickens.
