funfetti banana loaf with cream cheese frosting

this funfetti banana bread is proof that “healthier” baking can still feel joyful.

it’s soft, moist, and lightly sweet with pops of color throughout, finished with a simple cream cheese frosting that makes it feel just a little extra without being over the top.

think banana bread meets birthday cake but in an everyday, snack-able way.

taste & texture

the texture is tender and fluffy with a moist crumb thanks to the bananas and applesauce.

it slices beautifully and stays soft for days without being dense or gummy.

flavor-wise, banana is still the star, but the almond extract gives it that classic funfetti, bakery-style vanilla cake vibe.

the sprinkles add just enough sweetness and fun, while the lightly sweetened cream cheese frosting brings everything together without overpowering the bread.

perfect for snacking or breakfast

this is one of those recipes that works equally well as a grab-and-go snack or a cozy breakfast slice. i

t’s filling without being heavy, naturally sweetened, and balanced enough to pair with coffee or tea in the morning.

it also makes a great afternoon snack when you want something fun but still nourishing, especially if you’re craving something cake-like without going full dessert.

why this banana bread is healthier

this funfetti banana bread is lighter and more nutrient-dense than traditional banana bread recipes. it’s:

  • naturally sweetened with bananas, maple syrup, and coconut sugar
  • made with gluten-free oat flour and almond flour for more fiber and healthy fats
  • lower in refined sugar than classic funfetti or cake-style breads
  • made with applesauce instead of oil or butter for moisture without heaviness

it still feels indulgent, but it’s made with simple, wholesome ingredients that leave you feeling good after eating it.

gluten-free & approachable

using gluten-free oat flour keeps this bread accessible for anyone avoiding gluten, while still delivering a familiar banana bread texture.

even those who don’t normally love gluten-free baking won’t know the difference. it bakes up soft, sturdy, and sliceable every time.

substitutions & variations

this recipe is flexible and easy to adapt:

  • nut butter: almond or cashew both work well; choose whichever you prefer
  • eggs: use flax eggs to keep it dairy-free and egg-free but note the texture will be more gummy
  • sprinkles: skip for a plain banana loaf
  • frosting: enjoy it unfrosted for a lighter option, or double the frosting for more dessert vibes
  • muffins: this batter works great as muffins with a shorter bake time. start with 25 minutes and check.

storage tips

store unfrosted banana bread at room temperature for up to 2 days or in the fridge for 4–5 days.

once frosted, keep it stored in an airtight container in the refrigerator. slices can also be frozen individually and thawed as needed, which is perfect for meal prep or quick snacks.

Ingredients

  • bread
    3 medium-large ripe bananas, mashed (about 1 1/2 cups)
3/4 cup plain yogurt (greek or regular; dairy-free works too)
2 large eggs (or 2 flax eggs for vegan)
    1/3 cup maple syrup
    1/3 cup coconut sugar
1/4 cup runny nut butter (almond or cashew work best)
1 tsp vanilla extract or vanilla bean paste
    1/2 tsp almond extract
    1 1/2 cups + 2 tbsp gluten-free oat flour
    1/2 cup almond flour
    1 tsp baking soda
    1 tsp baking powder
    1/4 tsp sea salt
1/3 cup rainbow sprinkles (used supernatural brand but they disappear in the batter quite a bit. you can just top with sprinkles if using more natural brand to ensure the color stays in tact).
    cream cheese frosting
4 oz cream cheese, softened (regular or dairy-free)
    1 tbsp maple syrup
    1/8 tsp almond extract
    pinch of sea salt (optional)

Directions

  • preheat oven to 350°f. line or grease a standard 1 lb loaf pan (used caraway). if using a larger bread loaf pan, reduce baking time.
  • in a large bowl, whisk together mashed bananas, yogurt, eggs, maple syrup, coconut sugar, nut butter, vanilla, and almond extract until smooth.
  • add oat flour, almond flour, baking soda, baking powder, and sea salt. stir until just combined.
  • gently fold in sprinkles last, being careful not to overmix.
  • pour batter into the loaf pan and smooth the top.
  • bake for 52–55 minutes and let the loaf cool completely before removing from pan and frosting.
