Ingredients
bread
3 medium-large ripe bananas, mashed (about 1 1/2 cups)
3/4 cup plain yogurt (greek or regular; dairy-free works too)
2 large eggs (or 2 flax eggs for vegan)
1/3 cup maple syrup
1/3 cup coconut sugar
1/4 cup runny nut butter (almond or cashew work best)
1 tsp vanilla extract or vanilla bean paste
1/2 tsp almond extract
1 1/2 cups + 2 tbsp gluten-free oat flour
1/2 cup almond flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp sea salt
1/3 cup rainbow sprinkles (used supernatural brand but they disappear in the batter quite a bit. you can just top with sprinkles if using more natural brand to ensure the color stays in tact).
cream cheese frosting
4 oz cream cheese, softened (regular or dairy-free)
1 tbsp maple syrup
1/8 tsp almond extract
pinch of sea salt (optional)
Directions
- preheat oven to 350°f. line or grease a standard 1 lb loaf pan (used caraway). if using a larger bread loaf pan, reduce baking time.
- in a large bowl, whisk together mashed bananas, yogurt, eggs, maple syrup, coconut sugar, nut butter, vanilla, and almond extract until smooth.
- add oat flour, almond flour, baking soda, baking powder, and sea salt. stir until just combined.
- gently fold in sprinkles last, being careful not to overmix.
- pour batter into the loaf pan and smooth the top.
- bake for 52–55 minutes and let the loaf cool completely before removing from pan and frosting.
