Vegan Peach Tahini Oatmeal Cups

Ingredients

  • 2 cups old fashioned oats
  • 1/3 cup runny tahini
  • 1/4 cup coconut sugar
  • 1/2 cup almond flour
  • 1 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 cup peaches cut into small pieces

Instructions

  • preheat the oven to 350 degrees.
  • add all ingredients to a bowl, peaches last and mix well until a thick batter forms.
  • place into parchment paper muffin cups (about 1/3) cup in each and bake for 28 minutes.
  • allow them to cool down FULLY before you remove from the muffin tins so the cups set. store in the fridge or freezer in an airtight container and enjoy!
