prepare cauliflower and seeds: in a food processor, blend the cauliflower florets, pumpkin seeds, and sunflower seeds until they form a coarse texture.
season the mixture: transfer the cauliflower and seed mixture to a mixing bowl. add taco seasoning, onion powder, garlic powder, sea salt, pepper, tomato paste, and enchilada sauce. combine well until all ingredients are evenly mixed.
sauté the mixture: heat avocado oil in a pan over medium heat. add the cauliflower and seed mixture to the pan. sauté for about 10 minutes, stirring often to avoid burning. the mixture should become tender and flavorful. you can always add a little amount of veggie broth to cook it more tenderly.
prepare tacos: while the cauliflower mixture is cooking, preheat your oven according to the instructions for melting vegan cheese.
assemble tacos: once the cauliflower mixture is cooked, spoon it into soft or hard shell tacos. top with vegan cheese.
bake: place the assembled tacos in the oven and bake for about 10 minutes, or until the vegan cheese is melted.
