Ingredients
1 cup almond flour
1 cup gluten free all purpose flour
2 tbsp flax meal
1/4 cup coconut sugar
1 tsp baking powder
1 tsp cinnamon
2 tsp vanilla extract
1 cup grated carrot
1/4 cup agaveĀ 2 tbsp runny almond butter
1/4 cup almond milk
1/2 cup raisins
frosting-in the food processor, i blended 1/2 cup vegan cream cheese and 1/2 cup simple mills frosting)
Instructions
preheat the oven to 350 degrees.
mix the wet and dry ingredients until a thick dough forms and then fold in the carrots and raisins and combine well.
form medium size or large thick cookies and place on a parchment lined baking pan.
bake at 350 degrees for 16-19 minutes depending on size and thickness (for 4 large cookies bake closer to 20). cool down completely. then, add frosting to the center of the cookies and enjoy!
store in the fridge or freezer in an airtight container.
